Rabbit meat is the leading meat recommended by doctors for their patients with heart disease or diabetes. The reason is that rabbit meat is higher in protein than beef and lower in cholesterol than chicken. It's the newest 'Super Food" and well positioned to aid America's heart-healthy trend.
More and more Americans are seeking out healthier diets by sourcing their food from local farmers who have returned to traditional natural methods of farming. Many area rabbit farmers have banded together to jointly raise the numbers of rabbits requested by area farm-to-table restaurants.
